Asian ramen and cabbage salad

Everybody loves this tangy, crunchy, easy, minute Asian ramen slaw. So delicious and ridiculously simple! This version is all assembly — no cooking, and barely any chopping, required! This is literally opening a few bags, and dumping them in a big bowl.

Asian Ramen Salad with Ramen noodles, cabbage, carrots, bell peppers, and almonds and a simple ingredient dressing. I just arrived home in Utah for a few weeks for a much needed getaway before baby number 2 arrives! When I was pregnant with Jackson I feel like pregnancy was all I thought about because it was all soo new and exciting! Those 9 months just crawled by! Time has flown by! I really love this salad! I made a huge batch of it recently and my husband and I enjoyed it all week long.

Crisp coleslaw lettuce, toasted golden brown ramen noodles and almonds, green onion, and shelled edamame all drizzled with a delicious seasoned sweet dressing! This asian ramen noodle salad is sure to be a hit. Growing up this Asian ramen noodle salad was my favorite! I remember my mom would make a bowl of it and my favorite part were the leftovers if there were any. The longer it sits in the fridge, the more the dressing soaks into the coleslaw and the salad softens up but the flavor is out of this world.

I tweaked the recipe slightly, by adding shelled edamame and adjusting the salad dressing to up the health factor. Still SO good and an easy recipe I keep coming back to again and again! I may be dating myself, but how many of you recognize this cabbage salad?
